White Chocolate

Now I understand why White Chocolate never quite satisfied my need for chocolate. It's not chocolate at all. Sugar and milk with cocoa butter. The butter gives it that texture, smooth and creamy.There are no cocoa solids in it at all.
The butter is removed from cocoa just like butter is churned from milk. Butter is not milk, just as cocoa butter is not chocolate.
So..... when you need chocolate don't head for the white. Milk or Dark will do the trick!

My Sisters Brownie's

 My sis, Ms. Patty, made the best home made brownies ever! 
Back in Jr. and Sr. High School* Patty would make these and they were so good. She kept the recipe a mystery for many years. I always liked to cook but wasn't much of a baker and didn't discover her secret until much later.
  I was trying to save a little money and going to make a homemade chocolate cake. When I pulled out the box of cocoa from the cupboard  low and behold there was a recipe for brownies on it. What do they call that? A fabulous reality? I'm sure you can find a recipe many places. Cook books and online.
I made a batch from this recipe and wow, My Sisters Bronnie's! Maybe not quit as good as her's but good. So I called her and she admitted this was were the recipe came from. How easy was that after all these years.
 There are many different brands of cocoa, as you well know, and there is a difference in them for sure. Form "cheap" to quite expensive. Be sure to buy one that is 100% real cocoa. 
Recipes where there is a lot of fat , butter, and/or sugar, such as chocolate brownies, benefit from the more intense flavor of natural cocoa The Dutch process works more for syrups like for chocolate milk and on ice cream. It's not as bitter.
    Cocoa solids are the low-fat component of chocolate other wise known as cocoa powder. Cocoa butter is the fatty component. I believe it was the Swiss who discovered adding more cocoa butter to the mix made it smother and lowered the melting point thus chocolate bars.
But anyway Home Made Brownies are not that hard to do. Just a little more than dumping out a box and adding the egg and butter. If you can perfect it as my little sister did, you will never go back to the box!

Chocolate And Peanut Butter

I tried to  find some history on this mix but didn't find to much.
A former employee of Hershey's, set up his own candy-manufacturing business in the 1920s and started making the most popular brand of cup then it was sold to Hershey in the 1963.
The US  patent for peanut butter was issued in 1884.
Dr. Ambrose Straub, a physician from St Louis pursued a method for providing toothless elderly with protein in the 1890s. His peanut-butter-making machine was patented in 1903.
When peanut butter is combined with wheat to two make the perfect protein.
The Reese's Cup is one of my favorites even though there are other brands.

Some times you just can't stop.
I can't count how many times I've ate, almost, the bag of those miniature peanut butter cups. I like them cold just out of the refrigerator.  There we came back to peanut butter again.
Cookies. Well chocolate chip have to be my favorite. Home made are best but I'll take what I can get.
Raisins, nuts, whats not good dipped? Maybe a pickle.

Chocolate Money

We have all had those chocolate coins and eaten them, usually not the best of chocolate, but if  could really eat your money would you eat it? Probably not unless you had a lot of it. This is the way the Maya treated it. 
Of course chocolate was a form of money to them. Usually it was the well to do that drank chocolate, although working class people probably enjoyed chocolate every now and then too. 
The rich enjoyed their chocolate. It was a beverage then and drank from elaborately painted chocolate cups. Emperors were buried with jars of chocolate.  
Clearly, they wanted to make chocolate history themselves.

Cranberry Juice And Chocolate Ice Cream

This is an other treat I discovered  with my Grand Mother. If you enjoy Cranberry Juice you will like this combination.
They have more juices they have added to Cranberry now but just try this with the straight up Cranberry. It is a tasty treat.

Peanut Butter And Jelly

One of every child's, and adults too, favorites. Peanut butter and jelly sandwiches. I always likes strawberry jelly best but I believe grape it the top seller.
Nothing tops off this treat like a ice cold glass of chocolate milk! 
There are many chocolates to pick from. Powders and syrups. And then there is that one that's not chocolate at all but carob plus all those minerals. It's crystals and they never all dissolve Some float on top. My grand mother used to buy it. I liked it because of the crunch from the crystals on top.
Peanuts are a strange plant. They end up under ground but don't start there. When the flower gets pollinated the stem drops to the ground and then peanut develops.
Enough of that. The milk is what this is about.

They lived  around 1000 BC, and their word, "kakawa," gave us our word "cacao." Unfortunately, that's all we know. We don't know how, or even if, the Olmec people actually used chocolate.

A Chocolate Substitute?
