Now I understand why White Chocolate never quite satisfied my need for chocolate. It's not chocolate at all. Sugar and milk with cocoa butter. The butter gives it that texture, smooth and creamy.There are no cocoa solids in it at all.
The butter is removed from cocoa just like butter is churned from milk. Butter is not milk, just as cocoa butter is not chocolate.
So..... when you need chocolate don't head for the white. Milk or Dark will do the trick!
